Dark Berry Tart with Basil

Ingredients
TART FILLING
3 stems basil
300g blackberries
300g blueberries
150ml coconut milk
3 tbsp maple syrup
1 tbsp lime juice
1 tbsp corn starch
1 tsp agar-agar
150g blackberries to garnish
TART BASE
10 stoned Medjool dates
150g almonds
60g hazelnuts
60g sunflower seeds
3 tbsp virgin coconut oil
¼ tsp sea salt
Recipe
TART BASE
For the cake base coarsely chop dates (10). In a pan without oil, roast almonds (150g), hazelnuts (60g), and sunflower seeds (60g) until they begin to crack. Chop cooled nuts and kernels in a blender or food processor. They should not be too coarse, so that the mass will keep well but is not ground to flour. Add dates, coconut oil (3 tbsp), and salt (¼ tsp), and continue mixing until you get a sticky mass
Put the sticky mass into greased springform (~10 inches in diameter), and with a spoon, press the nut, seed, and date mixture firmly into the form. It should create a rim of approx. 1-inch height. Place cake base in refrigerator
TART FILLING
For the filling, pick off basil leaves (3 stems) from their stems and finely purée the blackberries (300g) and blueberries (300g) with the basil leaves. Then pass through a sieve
Add coconut milk (150ml) to the fruit purée and season to taste with maple syrup (up to 3 tbsp) and lime juice (1 tbsp)
Then stir in the corn starch (1 tbsp) and agar-agar (1 tsp) with a wire whisk
In a saucepan, while stirring continuously, bring berry purée to a brief boil
Then pour into a bowl and let cool until lukewarm, stirring occasionally
Spread filling on cooled cake base and shake the springform gently to avoid small air bubbles
Place tart in refrigerator for at least 4 hours
Garnish with remaining berries
NOTES
So this recipe is dairy-free, gluten-free, and vegan – thus some of the atypical ingredients. If you don’t keep to this type of diet and you may have trouble sourcing some of these ingredients, there are easy substitutes that can be found (i.e. gelatin can be subbed for agar-agar and cream can be used instead of coconut milk). However, we made it pretty much to a T and it was delicious and would totally recommend trying it this way if you can find all the ingredients!
