Matcha & Black Sesame Cookies

Time: 1 Hour 30 Minutes
Yield: 24 Cookies

Ingredients

  • 50g Unsalted Butter (Room Temperature)

  • 45g Granulated Sugar

  • 1 Egg

  • 15g Almond Flour

  • 85g AP Flour

  • 1 Tsp matcha powder (~4g)

  • 1 Tbsp Black Sesame Seeds

Recipe

  1. Sift the AP Flour (85g) and matcha (4g) together with the Almond Flour (15g). Set aside.

  2. Cream the butter (50g) and sugar (45g) together in the bowl of a stand mixer with a paddle attachment for 3-4 minutes.

  3. Add the egg to the bowl and beat well.

  4. Add the flour mixture and the black sesame seeds to the bowl and continue to mix until just combined.

  5. Separate the dough into two and form into two balls.

  6. Wrap the cookie dough in plastic wrap and roll it into a long round 2 inches in diameter and refrigerate for at least 30 minutes.

  7. Preheat the oven to 350 degrees Fahrenheit.

  8. Cut the cookie dough into thin slices then place on a baking tray lined with baking paper.

  9. Bake for 25 minutes then remove from oven and allow to cool on a wire rack.
