Winter Kale Salad

Ingredients

SALAD

  • 5oz Baby Kale

  • 1 Fuji Apple(Diced)

  • 1 Navel Orange (Peeled, Segmented, and Diced)

  • 1/3 Cup Pomegranate Arils

  • 1/4 Cup Sliced Almonds (Toasted)

  • 2oz Goat Cheese (Crumbled)

VINAIGRETTE

  • 3 Tbsp Champagne Vinegar (or White Wine Vinegar)

  • 1 1/2 Tbsp Olive Oil

  • 1 Tbsp Minced Shallot

  • 2 Tsp Dijon Mustard

  • 2 Tsp Honey

  • Kosher Salt To Taste

Instructions

  1. Whisk together the ingredients for vinaigrette and set aside.

  2. In a large serving bowl combine all of the salad ingredients and toss gently.

  3. Add in the vinaigrette and toss together

  4. Serve!
