Winter Kale Salad

Ingredients
SALAD
5oz Baby Kale
1 Fuji Apple(Diced)
1 Navel Orange (Peeled, Segmented, and Diced)
1/3 Cup Pomegranate Arils
1/4 Cup Sliced Almonds (Toasted)
2oz Goat Cheese (Crumbled)
VINAIGRETTE
3 Tbsp Champagne Vinegar (or White Wine Vinegar)
1 1/2 Tbsp Olive Oil
1 Tbsp Minced Shallot
2 Tsp Dijon Mustard
2 Tsp Honey
Kosher Salt To Taste
Instructions
Whisk together the ingredients for vinaigrette and set aside.
In a large serving bowl combine all of the salad ingredients and toss gently.
Add in the vinaigrette and toss together
Serve!
